I was really excited to make this classi soup! It turned out a fantastic recipe for a delicious and healthy dinner. It was very easy, fun and quick to make. I added rosemary which make this soup really refreshing for a ligh meal. I ate this soup as a main dish with a tilapia fillet and spinach on top. You may do the same or eat it as a entree or side dish.
Ingredients: yield: 4 servings
Procedure: In a casserole on medium heat, add the olive oil, chopped onion and chopped sparragus.
Wait about 7mins for the veggies to tender and add the remaining ingredients. Let it boil until the beans and sparragus are tender and turn of the stove. Transfer the ingredients to a food processor and pulse until creamy and homogeneous.
You can serve it inmediatly, store it in a bowl or heat it for a while in the casserole.
