Vegan Lemon and Almond Loaf


The Vegan Almond Cake from Maya Sozer is incredibly delicious. The recipe has only a few and simple ingredients. I had the blessed that I used a lemon form my lemon tree to make this delicious loaf. So it is organic!

The aromas of the batter while you mixed it will make you to eat the mixture, but please, be strong and do not eat it! The loaf smells so delicious, so lemony and so sweet even though the recipe only had 3T of agave! The result is a moist and soft loaf to enjoy with a glass of milk.



1cup whole wheat flour

1 cup gorund almonds

1tsp baking powder

a pinch of nutmeg

a pinch of sea salt

1/2cup water

3T organic coconut oil

1T vanilla essence

1 lemon juice

1 lemon zest


Sliced almonds for topping


1- Pre heat the oven at 180ºC.

2-In a recipient, mix all of the dry ingredients.

3- Add the liquid ingredients and mix until homogeneous


4- Spray a loaf pan with coconut oil.

5- Add all of the batter into the pan and topped with the sliced almonds.


6- Transfer it to the oven.

7- Let cook for 30-40 mins, until the bread is completely cooked.

8- Take out from the oven and let cool completely.


9- Finally, cut and serve
