Yes, those are Vanila Vegan Pancakes topped with Pecan Spread Ice Cream: G L O R Y!
It is the most fun way to eat your pancakes because you already have the sweetness of the ice cream and secondly, the ice cream will moist your already juicy pancakes. The combination of hot and cold creates a delightful sensation in our mouth. This pancake dish can also be serve as a dessert to share with the family after dinner.
It was pretty fun to make a photo shoot to this dish. My challenge was to take as much as great pictures before the ice cream has completely melt.

Ingredients: yields 4 medium pancakes
1/4cup whole wheat flour 2tsp meal flax seeds 2tsp chia seeds 1/4tsp salt 1/2tsp baking powder 1/2tsp nutmeg, cinnamon and ginger powder 1T honey 1T vanilla 1tsp coconut oil 1/2cup alomond milk
Procedure: In a small glass leave the meal flax seeds with 1T of water. In the meanwhile, Mix all of the dry ingredients for the pancakes. Carefully, add the liquid ingredients including the meal flax seeds and stir cautiously until everything is well mixed. Then, turn on a stove top on medium heat and drizzle coconut oil. Pour an amount of the batter and let cook until they look firm. Flip them and cook one more minute.
Once done, transfer the vanilla vegan pancakes to the serving dish and scoop about 1/2cup of the Pecan Spread Ice Cream.
You may add strawberries for color and chopped pecans for texture.
