Forget the store-bought tomato sauce and start making your own! It is simple, healthy and fresh and does not have preservatives nor sugar added and is gluten-free.
Made with fresh tomatoes, some sauteed onions, garlic powder, a bit of paprika to burst the color, basil for a fresher flavor and ginger for a twist. The sauce is thicken with a little bit of cornmeal (tapioca powder or cornstarch will also work).
The procesure is more less like preparing a jelly. Add the onions and small cut tomatoes to the pan and let boil. The tomato will loose its own juice. Incorporate the spices and carefully start to mash the tomato dices. Add the cornmeal, let boil a few more minutes until consistency and turn off the stove top.
I enjoyed these sauce on top of my pasta with the Lentil Potato Balls.
Size: 1/4 cup
400g small diced tomatoes
1/4 of a chopped onion
1/4 tsp garlic powder
A few pieces of ginger
1/2 tsp of basil
1- In a hot pan let boil the onion with the tomatoes and ginger.
2- When the tomatoes had loose their juice, incorporate the cornmeal, spices and mix until well dissolved.
3- Then, let boil about 3 more minutes and done! Enjoy on your favorite dish
