Sweet Potato Waffles

I adapted this recipe form The Nutritious Kitchen. There are amazing recipes for any occasion. These waffles are super hot, soft, sweet and incredibly delicious. They have blueberries inside. I topped them with the perfect peanut butter tablespoon and a drizzle of honey.

Ingredients:                                                                                                                                                                                                                                                             yield: 1 person

1/4cup whole wheat flour        2tsp brown sugar           1/2 tsp baking soda          a pinch of cinnamon, nutmeg and salt        a handful of blueberries                1/2cup sweet potato puree       water for mixing

Optional toppings: 1T peanut butter          a drizzle of honey

Procedure:                                                                                                                                                                                                                                                              Turn on your waffle machine and  spray coconut oil.

In a bowl mix all of the ingredients for the waffles and mix with water until consistency is done.

Pour all the batter in the center of the machine so it can spread evenly to all directions.

Close the lid and when the light is green (about 5mins) you can turn the waffle maker and let cook for another 5minutes. Take out the waffle carefully. Put it in the serving dish and garnish it as you wish.
