Rosemary Mashed Potatoes And Vegetables

Macaroni & Grill is my favorite restaurant. When I ate meat, my favorite dish was the Salmon Fritti Salad. I also liked to order the Scallops with wilted spinach. But when I turned vegan, Macaroni still was my favorite restaurant. I found vegan options in their menu such as farro, side of vegetables, pastas and potatoes. So, what I started to order at Macaroni was the mashed potatoes with a side of broccoli (see how easy is to create a vegan dish, eeeeh!) and WHAT A BLAST! Their mashed potatoes are so creamy, savory and have lots of texture. It was so good for me that I started to have cravings about it (I never imagined!). And I cant’t go to Macaroni each time I have a craving (LOL). So, I trusted myself, turn on my imagination and culinary skills to work and voilaaa, I created the most delicious, vegan, creamy, savory and chunky rosemary and garlic mashed potatoes! (Wow, those are a lot of adjectives, I even had to take a deep breath for saying them out loud xD)

I always like rosemary in my potatoes because I love this combination. For this dish, I boiled some red skin potatoes and let them cool perhaps for ten minutes. Then, I transfer 3/4 parts of the cooked potatoes to a food processor with the spices and a little bit of water until consistency. I cut the remaining 1/4 of the potatoes in small cubes and mixed them with the mashed.

I accompanied this dish with sauteed mushrooms, onions and boiled baby carrots and Brussels sprouts.

Ingredients:

yield:4 servings

For the potatoes:

about 2 cups red skin potatoes

2tsp rosemary

1tsp garlic powder

a pinch of sea salt

1/4 cup water

Additional:

Sauteed/boiled vegetables with your choice of spices

Procedure:

For the potatoes:

1- Boil the potatoes with water in a casserole at medium heat until tender.

2- Let them cool, without the water and with ice in a large recipient for 10 minutes, approx.

3- Put 3/4 parts of the potatoes into the food processor with 1/4 cup water, the rosemary, sea salt and garlic. Pulse until a mashed consistency.

4- Cut the remaining potatoes into cubes.

5- In a bowl, mix the mashed potatoes with the cut potatoes and serve with your choice of side!
