Raw Mango Squares


We are getting tropical for summer with these Raw Mango Squares. This recipe is another adaptation from Naturally Sassy.. wiat this is the third recipe I post from her. I can’t stop it! Saskia’s recipes are very fun, nutritious, unique, different and delicious.

With this mango recipe, you are going to be ready for summer. I adapted the original recipe according to my preferences. I did not add the cocoa powder to the crust, instead I used vanilla. Second, if you prefer a stronger mango taste, you may use mango natural flavoring or extract.


I used a square pan to prepare the dessert and put the remaining batter in dessert cups. You may serve the dessert plain, with a side of vegan yogurt or topped it with fruits, nuts, seeds or a spread.

This raw dessert is very simple, fun and fast to prepare. Basically, what you need is a food processor, a square mold and a freezer.



yield: 10 squares

For the base:

1 cup almonds

1/2 cup seeds (pumpkin or sunflower)

1 cup pitted dates

1/2 tsp vanilla extract

A pinch of salt

1T of water

For the Mango Filling:

1.5 cubed cut mango (about two cups)

1 cup soaked cashews

1/3 cup organic coconut oil

1/3 cup of water


For the base:

1- First, grind the almonds in the food processor until fine.

2- Add the other ingredients and blend until sticky and well mixed.

3- Transfer the dough to a square mold and press until the surface is well covered.

4- Set aside.


For the Mango Filling:

1- Put everything in the blender and blend until smooth and homogeneus.


2- Carefully, evenly distribute the filling on top of the base in the square pan.


3- Store in the freezer until firm (about 30 minutes).

4- Remove from the freezer and cut evenly into squares.


5- Transfer to a serving dish and serve with your choice of compliment.
