These Quinoa Truffles are a healthy, fun, delicious and unusual kind of truffle. These truffles are primarily made with quinoa. As you should know or heard, quinoa is a Peruvian ancient grain complete in amino acids. That is why quinoa is considered a super food and is essential in a vegan’s diet. What I like about these truffles is the unusual flavor and texture. Concerning the flavor, you can taste the natural quinoa, the bitter raw cacao nibs but also the sweetness of the dates. The treats are covered in chopped raw almonds for a nutty flavor and extra nutrition. About the texture, the truffles are soft but crunchy. They may be soft like the Carrot Cake Truffles but the raw cacao nibs pieces plus the outer almonds adds crunchiness.

yield: 12 truffles
1/3 cup dry quinoa
2/3 cups of water
1/2 cup raw almonds
1/3 cup Icadelicias Almond Spread
1/3 cup raw cacao nibs
1- First, you need to cook the quinoa with the water. In a casserole, bring the quinoa with the water to a boil and cook until it has absorbed all the water. Once done, set aside.
2- Grind the almonds in the food processor once, just to have many small pieces of almonds for coating.
3- Remove half of the almonds in a recipient and leave the other half in the food processor.
4- Now, add the dates and pulse until getting a paste.
5- Add the Almond Spread, hot quinoa, raw cacao nibs and pulse until everything is homogeneous.
7- Repeat the process until the batch is over.
8- Store them in the freezer for one hour and then you can move them to the refrigerator and enjoy!
