Bread?! Who has time for that? I don’t know if you think the same but when I thought of making bread, a difficult and long procedure with a big mass of dough in my hands come to my mind. Besides, many of the bread recipes include active dry yeast which can be difficult to work with.
But my bread conception has changed COMPLETELY, once again, thanks to Naturally Sassy. She has a recipe of a Quinoa Bread that is VEGAN and GLUTEN FREE. The bread has small amounts of oil and sweetener. Sincerely, while making the bread, I was very skeptic because when I saw the dough it has a kind of texture that I had never seen. So I thought that the bread recipe was not going to work and it was going to turn into something weird.
But I kept the faith (xD) and followed Naturally Sassy’s Quinoa Bread procedure… An hour later, I had this AMAZING and unique VEGAN and GLUTEN FREE Quinoa Bread. The bread is very thick, gooey and moist. It behaves as a commercial loaf of bread.
As to the nutrition of the bread, it is the best part because you do not have to worry about the carbohydrates. The quinoa plus the chia seeds make this bread high in COMPLETE PROTEIN and FIBER. This Quinoa Bread also has ESSENTIAL FATTY ACIDS (omega 3 specially) from the powerful chia seeds.
When making breads at home, one usually cook sweet breads of banana, pumpkin, vanilla, chocolate, etc, but this bread is not that kind. The Quinoa Bread works for either a sweet or salty dish. To the recipe, you may add your favorite spice like basil, parsley, rosemary, paprika or even garlic. So make it ahead and do not hesitate to tell me your story!
yield: one loaf of 8 slices
2 cups of quinoa
3/4 cup chia seeds
1 T organic coconut oil
your favorite spices to taste (i used curry, cinnamon and basil)
1 tsp baking powder
a pinch of sea salt
1- Pre heat the oven at 160°C/320°F
2- Let the quinoa soaked in water for 12 hours. Also soak the chia seeds in water (1 cup)
3- After the 12 hours, transfer the quinoa and chia seeds to the food processor and process until smooth.
4- Add the remaining ingredients and process until creamy.
5- Transfer all of the batter to a bread mold and bake for 45-60 minutes (or until you insert a toothpick and it comes out clean).
6- Then, let the bread cool completely and cut into slices.
