YOU DO NOT NEED ANY ANIMAL PROTEIN WHEN IT COMES TO THIS QUINOA AND LENTIL SOUP! This protein and fiber rich course is an inspiration of my own. It has quinoa and lentils as main ingredients which both are known to have complete protein. It also contains onions, ginger, garlic, ginger and cilantro. So you can conclude that this soup is pretty healthy and improves the immune system.
I played with the texture by pureeing half of the soup in the food processor and leaving the other half as is. The puree adds certain density to the dish.
You may serve this soup with a slice of bread, avocado or any colored vegetable that you most like!
yield: 4 servings
1 cup quinoa
a pinch of sea salt
1 tsp parsley
1 can of lentils
1/2 big onion chopped
A slice of bread
1- First, add 2 cups of water with the quinoa in a pot and let boil.
2- Add the spices and stir.
3- In the meantime, sauteé the onion in a pan until translucent and aromatic.
4- Add the lentils to the quinoa and the remaining of the water and let boil on low heat one more time/
5- After, add the sauteed onions and stir everything.
6- Once everything is well mixed and cook, turn off the stove top and let cool for 15 minutes.
7- Transfer half of the soup to a food processor and pulse until puree consistency.
8-Add the puree to the soup in the pot and stir.
9- Add one cup of water four more soup consistency.
10- You may reheat the soup or serve.
