Peppermint Mocha Ice Cream

WP_20150805_003                                                                                                                                                                                    We all know that Peppermint Mocha is a seasonal flavor that comes with Christmas. I first tried it in Starbucks. Since then, I have been creating healthy, delicious and fun recipes with these flavors..These are three strong flavors that create an explosive ice cream. Here we have peppermint, cocoa powder and coffee. I used 1/4tsp of peppermint essence, 1 T of cocoa powder and 1/2tsp coffee flour. I blend the frozen and chopped bananas with half of black coffee and water. This ice cream will leave you a nice after taste and will put your body into work. If you are really sleep in a morning or need a boosting breakfast, then you should have this Peppermint Mocha Ice Cream. You will not even need your morning coffee for waking up or to avoid a headache.


For the peppermint flavor, I used a peppemint extract that I bought at Marshall’s for $3.99. I use this extract for many cooking recipes. I garnished my ice cream with organic candy canes that I found at Freshmart for $4.59. They contain 15g of carbohydrates if you eat it all. It weight 15g so it is 1g of carbohydrate per 1g of serving. Easy math! For my fruit serving, I decided to go with rasberries. Rasberries and dark chocolate pairs amazingly.


Ingredients:                                                                                                                                                                                                                                       yield: 1 person

1.5 frozen banana (4-5oz)       1T cocoa powder         1/4tsp peppermint extract      1/4cup black coffee         1/4tsp coffee flour                                   water for mixing if necessary

Optional toppings: candy canes, dark chocolate chips, candy canes, rasberries, other fruits, mint leaves


Procedure:                                                                                                                                                                                                                                             By using a blender, mix all the ingredients until ice cream consistency. Serve with your preferred toppings and enjoy in a hot morning or day!
