Peanut Butter and Jelly Pancakes


Who doea not love peanut butter and jelly!? The reality is that any nut butter with jwlly tastes really good and servesas a pick me up snack or meal. It delivers energy due to the combination of healthy fats, carbohydrates and protein. These pancakesare blended with peanut butter and jelly. I used a homemade chia blueberry jelly but you can use anyone you have in the fridge. The pancakes are really fluffy. There is a special balanced between the saltyness of the peanut butter and the sweetness of the jelly in each bite.


Ingredients:                                                                                                                                                                                                                                             yield: 1 person

1/4cup whole wheat flour        2tsp brown sugar        1T jelly      1T peanut butter      1/4tsp baking powder     a pinch of salt     water for mixing


Optional toppings:  1/3cup greek yogurt       fruits of choice      peanuts     more jelly or peanut butter      honey


Procedure:                                                                                                                                                                    In a bowl mix all of the ingredients with water until pancakes consistency.


Turn on a pan on medium heat and spray coconut oil. Pour the desire amount of batter in the skillet and cook until bubbles appear. Then, Flip and cook one more minute.


Transfer the cookes pancakes to the serving dish and topped it with your preferred ingredients.
