Peanut Butter and Jelly Oatmeal

This a fun twist to your peanut butter and jelly sandwich. This nutritious meal is a must in the American Culture. The workers always had a penaut butter and jelly sandwich in their lunch hour or eat half in the morning snack and the other half in the afternoon snack just as the “jíbaros” in Puerto Rico did with bread and coffee. Peanut butter and jelly contains healthy fats and protein. The best part is taht it is vegetarian! (It depends on the bread you use if it is vegan) You can also have healthy carbohydrates if you spread a homemade or organic jelly and a healthy bread with few ingredients. It has been tested that the combination of these macro nutrients fuel our body at any time of the day and for any workout.

Many of the peanut butter lovers, like me, love the sticky texture of the peanut butter that plays with your tongue. Another reason why most of the people love peanut butter, is because of the combination of salty and sweet flavors. I, specially, love to play with these two contrast flavors. For example, waffle or pancakes with fried eggs.

In the pictures you can see the traces of the peantu butter. I used homemade blueberry chia jam, but you can use the one you have in your refrigerator. I topped it with strawberries, blackberries and half a banana.

Ingredients:                                                                                                                                                                                                                         yield: 1 person

1cup oatmeal       1T peanut butter       2tsp honey      2T jelly     1/2tsp vanilla     a pinch of cinnamon     2cups of water (or any liquid)                  1T peanut butter

Toppings: strawberries       blackberries       half a banana

Procedure:                                                                                                                                                                                                                            Pour the two cups of water in a casserole on medium heat. Add the peanut butter and vanilla and stir. Then, mix in the oats and the cinnamon. Let it cook until it boils. Now, put the heat on low and add the jelly.

Cook it until completely done and creamy. Transfer it to the serving dish and add the toppings
