Peanut Butter and Chocolate Chunk Ice Cream

This nice cream is a little bit different from the ones I usually do but the flavor and consistency is perfect! It is a regular nice cream as the ones I do most of the time but this has other ingredients like coconut flour and since it is peanut flavored it has peanut butter which make this vegan ice cream creamier. The element that I like the most of this course are the pieces of chocolate fudge! 

 

Since this recipe from the Unconventional Baker makes many batches, I store it in the freezer and use it as a meal, eat it with fruits, or add a scoop to the pancakes, crepe or waffle.

Ingredients:

yield: 2 cups

For the chocolate chunks:

1/3 cups coconut flour

2 T cocoa powder

1/4 cup organic agave

1tsp vanilla

1/4tsp sea salt

For the ice cream:

3 frozen banana in slices

1/2 cup peanut butter

3T organic agave

1 tsp vanilla

1tsp sea salt

Procedure:

For the chocolate chunks:

1- Add all of the ingredients in a food processor.

2- Transfer the batter to another bowl.

3- Separate the chunks with your hands and set aside

For the ice cream:

1- Blend all of the ingredients until having a homogeneous ice cream.

Assembly:

1- Add the chocolate chunks to the ice cream and mix very well.

2- Transfer it to the storing bowl and place in the freezer.

3- You may also serve it and enjoy!
