Pancakes Layered with Bananas, Peanut Butter and Topped with Berries

Smooth. Sweet. Fluffy. Nutritious. Delicious.

Instead of adding a mashed banana to the batter, I decided to add banana slices to the pancake in the pan. It added a layer of smoothness and sweetness to the dish. Besides, when you heat bananas, their flavor is maximize and you will also get a delicious aroma in the kitchen. You should try pan heat bananas! You just heat them in the pan for a few minutes until they turn a little bit brown. Then you can eat them, add it to any dessert, recipe or use it as a topping for pancakes, oats, etc.

Second, when adding other elements to this dish, I spread homemade peanut butter between each pancake. This added a salty contrast plus you get a layer like a cake with frosting in the middle. Making peanut butter at home is very simple and of course more nutritious because they do not have any added fat, sugar nor preservatives. I blend 2cups of peanuts with 2T of grapeseed oil. You can blend it with other type of oil like avocado or coconut. I do not recommend olive oil because it added a rare flavor.

For topping, I mashed a few berries. The berries added the juicy element that was the oerfect substitute for not using organic agave or maple syrup.

Ingredients:

yield: 1 person

1/4 cup flour

1 scoop pea protein powder

2 tsp maca powder

cinnamon to taste

a pinch of sea salt

1/8 tsp baking powder

water for blending

slices of a banana

peanut butter

1/4 cup berries

Procedure:

1- In a bowl mix all of the dry ingredients and pour water until pancake consistency.

2- Drizzle oil in a pan on medium heat.

3- Pour a desired amount of the batter into the pan.

4- On the pancake batter that is cooking in the pan, add 3-4 slices of banana.

5- Once the pancake is ready to flip, flip it and let cook 2 more minutes (to get the banana ready). Transfer the pancake to the serving dish. Repeat th eprocess with the remaining batter.

6- Spread peanut butter to the done pancakes. Topped them with the remaining bananas and the mashed berries.
