These Oatmeal Pancakes are really fluffy, moisty and delicious. They have oats, chia seeds and vanilla. They are a great meal option for vegans or vegetarians. You can topped it with greek yogurt, nut butter and any fruit. The texture of these pancakes is incredible and are very delightful with a cup of tea or coffee. The oatmeal is what really gives these pancakes and amzing soft texture and the chia seeds make them very fluffy. You will obtain better results if leave the mixture prepared overnight and then add more water to the mixture when cooking since the chia seeds and oats will absorb much of the water.
Ingredients: yield: 1 person
1/4cup whole wheat flour 1/4cup oatmeal 2tsp chia seeds 1/4tsp vanilla essence 2tsp brown sugar a pinch of salt, cinnamon and nutmeg 1/4tsp baking powder water for mixing purpose
Toppings: 1/3cup greek yogurt, fruits, 2tsp nut butter
Procedure: In a bowl mix all the ingredients for the pancakes.
Turn on a pan a medium heat and drizzle coconut oil. Pour an amount of the batter and let cook until bubbles appear.
Flip and cook 30secs more.
Transfer the pancakes to the serving dish and add the toppings.
