I guess that you have taste, seen or heard Morning Glory Muffins. Maybe in a continental breakfast or a family breakfast meeting. Morning Glory Muffins originated in 1978. These muffins are usually very sweet consisting of apple, pineapple, raisins and in occasions carrots and nuts. Now that you became familiar with Morning Glory Muffins, I will introduce you to my adaptation of The Healthy Maven’s No-Bake Morning Glory Breakfast Cookies. These cookies are naturally sweet enough with just carrots, raisins, banana and agave. They are chewy and crunchy. If you eat them as a breakfast with a cup of coffee, I assure you that you will be able to do any task! When you read the ingredients, you may think it is a long procedure but these cookies are very simple and fast to prepare. The only thing that you need is a bowl, the ingredients and your hands! So make ahead my adaptation of Morning Glory Raw Cookies.
yield: 14 medium cookies
4.5 cups oats
2T chia seeds
1/4tsp sea salt
1cup grated carrots
1/2cup grated apple
1/4 cup any Icadelicias Nut Spread
1/3 cup agave
1/2 ripe banana mashed
1tsp vanilla extract
1/3cup almond milk
1- Mix all of the dry ingredients except the raisins and walnuts in a big bowl.
2- Mix all of the liquid ingredients except the almond milk in another bowl.
3- Now, add the liquid mixture to the dry mixture and slowly add the almond milk until completely mixed.
4- Finally, add the raisins and walnuts.
5- Take out a cookie tray. Take a batch of the mixture about the size of your palm and flatten in the tray.
6- Repeat the process until the batter is over.
7- Store the cookies in the freezer for 45 minutes and then transfer them to the refrigerator and they will be ready to eat!
