This Energy Balls were one of my first and favorite recipes when beginning my vegetarian lifestyle and also when beginning my adventures in the kitchen. First, I must tell you that this kind of snacks were not my favorites because I used to make a mess with the batter when shaping them into balls. My sister was usually the one getting into the sticky mixture. She loved that! But as I ALWAYS tell, PRACTICE MAKES PERFECTION. Besides, when you try new recipes, you choose your favorites (deciding whether on their flavor, texture or procedure) and stays with it. This is my case with these Energy Balls!
They are made with organic oats, banana, chia seeds and my Icadelicias Peanut Spread. Simply mix everything and then shape the batter into balls, any size! Bigger for many bites or tiny for pick me ups. You can use any Icadelicias Nut Spread to make them and the flavor will change dramatically. I suggest to use Almond, Pistachio or Cashew Spreads.
yield: 18 energy balls
2 ripe bananas
1/4 cup coconut flour
2 cups oats
1/4 cup chia seeds
2T Icadelicias Peanut Spread
1- In a bowl mash the bananas.
2- Add the agave, Peanut Spread, cinnamon and coconut flour. Mix until homogeneous.
3- Now,add the chia seeds with the oats.
4- When everything is fully mixed, take about a tablespoon of the batter and shape into balls.
5- Transfer them into a cooking tray and store them in the freezer for at least an hour.
6- After the hour, they will be firm enough to eat. Then, store them in the refrigerator.
