Crepe Filled with Sweet Potato Mousse


Beside eating the Sweet Potato Mousse only as a mousse, I enjoyed it in a crepe. Usually crepes are filled with cream or yogurt, amd this mousse is an option to filled your crepe differently and in a vegan way. I accompanied the crepe with kiwi and berries.



Yield: 1 person

For the crepe:

1/4 cup whole wheat flour

2T vegan protein powder

A pinch of sea salt

Water for mixing

For the filling:

About 3T of the Sweet Potato Mousse





For the crepe:

1- First, heat a pan with a drizzle of organic coconut oil on low heat.

2- Prepare the crepe batter by mixing all of the ingredients in a recipient. Add water until consistency.

3- Once ready, pour all of the batter in the hot pan and cook until it looks completely firm (specially in the center). About 7 minutes.

4- Flip the crepe and cook about 3 more minutes.


5- Transfer the crepe to the serving dish, add the mousse, fold the crepe amd add the toppings!
