In these pancakes you really can taste the three main ingredients: the rich coconut, the cocoa and bold coffee. I topped them with berries and toasted coconuts. Their texture is really soft and a bit chewy.
Ingredients: yield: 1 person
1/4cup whole wheat flour 1/2tsp coffee flour 1T cocoa powder 2T coconut milk 1tsp brown sugar a pinch of salt 1/2tsp coconut essence black coffee 1/4tsp baking powder
Optional toppings: 3/4tsp toasted coconut shreds berries
Procedure: In a bowl mix all the dry ingredients. Then add the liquid ingredients and use the black coffee to dilute the mixture until pancake consistency. Turn on a pan and add coconut oil in spray. Pour the batter and let cook until bubbles appear. Then, flip the pancakes and cook other 30secs. After cooking the pancakes, serve them in a dish. Add the toppings
