Coconut and Pineapple Rice with Macadamia Nuts


I think that I am adapting pineapples as the serving dishes instead of ceramic ones.

Now that I have more time to dedicate to the kitchen, I have been able to make old recipes. I had a screenshot in my cellphone of a pineapple coconut rice. I had all the ingredients so I made the dish. I was still having the other half of the pineapple, so why not to serve this tropical rice in the pineapple! I remembered that the first time I ate rice in a pineapple it was in Miami in an Oriental restaurant that my mother’s cousin and fiancee invited us because the next day was my Juilliard audition. I loved the idea of serving the rice on the pineapple, Pineapple brings sweetness and juiciness to any dish. It also turns everything very tropical because besides mangoes and coconut, what else do we eat on summer: pineapples!

Pineapple are very hydrating and juicy. They are famous for their bromelian component which is an enzyme that helps in digestion. This tropical fruits has also been categorized as antiinflamatory. Like any other fruit, pineapples have antioxidant properties due to their vitamin V. Pineapple are also rich in manganese and thiamine.

For this rice I used coconut flour instead of coconut milk. Nonetheless you may use coconut milk if you do not have coconut flour but will needt o play with the liquid ratio (I will help you with that further in the ingredients and procedure.)  I also used roasted and salted macadamia nuts and pineapple cubes. I cooked the rice in a rice cooker (because I was hungry) but if you are not in hurry, you can cook the rice in a big pot.



yield: 8 servings

suggested serving size: 3/4 cup

A half of a pineapple

2 cups rice

3/4  cup pineapple cubes

2/3 cups coconut flour

2/3 cups macadamia nuts

A pinch of sea salt

2.5 cups water (If using one can of coconut milk, then use 1.5 cups of water.)


1- In rice cooker or pot, add together the rice, water and/or coconut milk or coconut flour with the pinch of sea salt.

2- When the rice is finishing to boil, add the pineapple and mix evenly.

3- When the rice is almost done add the macadamia nuts and mix evenly.

4- If the rice is done give it another stir assure that the grain is cooked.

5- Serve in the half of the pineapple.

*You may also serve this dish with a side of salad.*
