Cashew Coconut Protein Bites

I make this bites with a recipe courtesy from my sister. The recipe is very simple, you just need 1 cup of each: dates, coconut shreds, cashews and then I added a protein powder, cinnamon and maple syrup for a better flavor. The flavor is so balanced plus the cashews pair perfectly with the coconut shreds. If you are a coconut lover like me, I am convinced that these will turn your favorite bites. What I like the most of this recipe was the texture, because when you are shaping them into balls. the mixture is not too sticky for your hands neither too loose to shape.

These bites are raw vegan. Each bite contain 5 g of fat 8 g of carbohydrates, 2 g of fiber and 2 g of protein.


yield: 24 bites

1 cup unsweetened coconut shreds

1 cup dates

1 cup cashews

1/4 cup pea protein powder

2 T water

2T maple syrup

cinnamon to taste


1- In a food processor, add the dates, coconut shreds, cashews and protein powder and blend until crunched.

2- Now, add the water, maple syrup and cinnamon. Pulse until you see a change in consistency. The batter should be more compact and sticky.

3- Take 1 T of the batter and shape it into a sphere. Shape it as you will do with a clay.

4- When you finished, you can either grab a bite or chill them a few minutes in the refrigerator.
