Carrot Cake Oatmeal


Many people love carrot cake but sometimes they private theirselves because of the calories it may have and it can be unhealthy to our system. I made a carrot cake oatmeal that you can indulge in that day when you are craving a carrot cake with a latte. I also have a Carrot Cake Crepe, Pancake, Bites and actually a Cake! I sell the cake at $5.00. The cake is vegan. I substitute the egg with flaxmeal so it is healthier for you because it contains omegas and more protein than eggs. The cake have spices, nuts, coconut, raisins and of course carrot. The frosting is really healthy because it is made with greek yogurt and topped with coconut shreds.


Ingredients:                                                                                                                                                                                                                                             yield: 1 person

1cup oats        1cup water       a pinch of nutmeg and cinnamon       1T coconut shreds       1/2tsp coconut essence      1/4tsp vanilla     1T chopped wlanuts       1T raisins        1/2cup shredded carrots


Procedure:                                                                                                                                                                                                                                                In a cesserole on medium heat stir in the ginger water, oats and all of the remaining ingredients. Cook until the oats are creamy and done. Transfer the oatmeal to a deep dish.
