This pancakes have the whole package! They are smooth, sweet and juicy and also crunchy. Why? Because I had the awesome idea of adding granola and berries to the batter. The granola I used was homemade and I included the link here. I usually and orefer not to buy or consume store-bought granola because they usually contain unnecessary fats, carbohydrates and ingredients. I have many granola recipes and this one is oil free. And surprisingly, it made many clusters! So many people love granola clusters and I am one of those!
With the heat and the pancakes cooking, the berries expand and let out their juicyness and sweetness.
I ate this pancakes with the remaining amount of granola, berries and cashew yogurt. I liked very much this cashew yogurt because it is smooth and has a natural and soft cashew flavor. I also liked it because it contains balanced macros.
1/4 cup flour (of your preferrence)
3T pea protein powder
1/8 tsp baking powder
Cinnamon and nutmeg to taste
a pinch of sea salt
water for mixing
1/2 cup berries
1/3 cup oil free granola
1/4 cup cashew yogurt
1- In a mixing bowl mix the first five ingredients until consistency.
2- Turn on a stove top on medium heat and sprayed the pan with coconut oil.
3- While the pan is warming, incorporate 3T of the granola and 1/4 cup of the berries to the pancake mixture.
4- Pour the desired amount of batter into the pan and cook for that side until the borders begin to firm. Flip and let cook 1-2 mins.
5-Transfer to the serving dish and finish with the remaining berries, granola and the cashew yogurt.
