Banana Pie

My dad is constantly sending me amazing, fun and delicious recipes from Food Medicine (look for them on FB). Even though he is not vegetarian neither vegan, he is very conscious about living a healthy lifestyle. His favorite desserts are raw/vegan ones. He likes the texture, the flavor and the nutrition they contribute. He loves to indulge them with a glass of White Zinfandel wine. He uses to buy raw vegan cakes from Poliniza a local enterprise that delivers incredible raw desserts. You may contact her via FB and IG. He also eats the raw vegan desserts that I make my own at home. But this time, he wanted ti make his own raw vegan dessert and he decided to go for a Banana Cream Pie (adapted recipe of Food Medicine)

This dessert basically consist of ripe bananas and cashews. When making the crust (that consist of dates and nuts) be careful not to over process it becuase the nuts will start to release their own oil.

My dad couldn’t enjoy the process more. You can see him in the pictures! He was like a kid. He enjoyed so much this process of making the crust, pressing it to the mold with his hands, giving delicacy and love to his first raw vegan dessert. My dad like me, is a monkey (cuz we love bananas sooo muuuch!) So what a better dessert than this?!

Just a little detail…I forgot that a Banana CREAM Pie has cream in it for serving so I did not buy the coconut cream. So,due to that the correct name of this dessert should be Banana Pie. But if you have a vegan whip cream, add to it when serving it.

Ingredients:

For the crust:

2. 5cups walnuts

1.5 cups dates

a pinch of salt

1 tsp vanilla

For the crust:

1 cup mashed banana

2/3 cups cashews

1/4 cup agave

1/3 cup organic coconut oil

1 Tbsp vanilla

2 T lemon juice or apple cider vinegar

Procedure:

For the crust:

1- Blend the nuts first until four consistency.

2- Add all of the remaining ingredients until a dough forms.

3- Press the dough into a 9 inch round pan

4- Set aside in the freezer while you make the filling.

For the filling:

1- Add all of the ingredients to the blender.

2- Take out the crust form the freezer and pour all of the filling on top.

3- Cover with plastic wrap and leave it in the freezer for at least two hours.

4- Take out, cut and serve.
