Experimenting with vegan cookies recipes, I found out that vegan cookies with bananas are my favorite! These cookies have oats, Icadelicias Almond Spread and of course, BANANA. These cookies are vegan but not raw because they are baked at 190ºC for 15minutes or until golden. As a cute detail, I put a slice of banana in the center of the mixture before putting them in the oven.
I couldn’t resist them so I ate three of them with a cold glass of almond milk. I felt like Santa Clause eating his Christmas cookies. Their texture is not too hard but neither soft. I like the feeling of the almonds and oats together. The flavor is perfect because you can taste the delicious oven-baked banana. These cookies are priceless to enjoy with a glass of vegan milk.

1 flax egg (1T flaxmeal with 3T of water)
1/2cup Icadelicias Almond Spread
1 medium size banana mashed
1t baking powder
a pinch of sea salt and cinnamon
1T chia seeds
Banana slices for topping
1- Pre heat the oven at 190°C.
2- First, make the flax egg by mixing the ingredients in a small recipient.
3- Now, add the dry ingredients in a bowl and mix.
4- Pour the Icadelicias Almond Spread, agave, mashed banana and flax egg.
5- Stir everything until well mixed.
6- Take about 1T of the cookie batter and flatten in the cookie tray.
7- Repeat the process with the remaining batter and add the banana slices in the center.
8- Put the cookies in the oven and bake during 15mins or util golden.
9- Take out of the oven and let cool completely.
10- Store in the fridge.
