Pumpkin Oatmeals


Pumpkin is a food that is always present in most of the Puerto Rican dishes since you can cultivate it any time of the year.  Pumpkin is a versatil ingredient in the kitchen. You can eat it as a puree, use it for many desserts, pancakes, breads and use your creativity to make waffles, ice creams, french toasts and soups. Since my sister loves pumpkin, I had create with her three versions of pumpkin oatmeasl.


The first one is a Pumpkin Spice Oatmeal because it contains nutmeg, anis, cloves, allspice, cinnamon, vanilla and ginger. This oatmeal will be great for your stomach since all this spices will get in charge of it. The flavor is very refreshing and unique. The oatmeal texture is very creamy. I topped it with blueberries and added chopped pecans and hemp seeds while cooking the oatmeal so you will get a crunchy bite many times. As you observe the oatmeal you can see some brown dots due to the spices.


Ingredients:                                                                                                                                                                                                                                         yield: 1 person

1/2cup oats        1/3cup pumpkin puree        1/2cup ginger warer        2cloves       1 allspice         1 anis star     1/4tsp vanilla essence     1T chopped pecans     1T coconut shreds           1/4tsp nutmeg, cinnamon, anis seeds and ginger zest


Procedure:                                                                                                                                                                                                                                             In a casserole add the oats with the water and turn on the stove on medium heat. Then add the spices, pecans, coconut shreds and pumpkin puree and mix it all carefully. Let it boil and then lower the heat until creamy and cooked. Finally, turn off the stove and transfer the oatmeal into the serving dish. Add the blueberries.

Pumkin Spice Latte Oatmeal:


What about the Starbuck Pumpkin Spice Latte in a bowl of rich and creamy oats?! No, no, no….even better it s homemade so no bad sugar neither fats but wise calories. I used spices such as allspice, nutmeg, cinnamon, vanilla, anis and cloves. I cooked the oats with pumpkin puree and black coffee. Finally, I topped the oatmeal with almond butter (extremely gooooood!) and berries.


Ingredients:                                                                                                                                                                                                                                             yield: 1 person

1cup oatmeal      2/3cup pumpkin puree     2/3cup black coffee      one allspice, one clove and one anis     1/4tsp of vanilla, cinnamon, and nutmeg

Toppings:   1T almond butter      berries


Procedure:                                                                                                                                                                                                                                               In a casserole on medium heat add the coffee, pumpkin puree, spices and stir in the oats until everything is incorporated. Cook about five minutes until creamy and cooked. Transfer the oats to a deep dish and add the toppings.

Peanut Butter and Pumpkin Oatmeal


This incredible recipewas created from my sister. She is a pumpkin lover and also a penut butter lover so she decided to combine her two most favorite ingredients infused in an oatmeal. The results were succesful. This oat have spices, pumkin and peanut butter in it. You may want to add the peanut butter quantity if you want it to taste more like peanut butter, but sincerely, this recipe has the perfect balance between pumpkin and peanut butter. In some bites you may get tiny penut butter clumps and those bites are the best ones! I topped it with black figs and a drizzle of coconut milk.


Ingredients:                                                                                                                                                                                                                                              yield: 1 person

1cup oatmeal      2/3cup pumpkin pure       1/2cup ginger water         1T peanut butter         one allspice     a pinch of anis seeds, cinnamon and nutmeg      1/4tsp vanila       1 clove

Additional:  1oz figs      1/2tsp coconut milk


Procedure:                                                                                                                                                                                                                                               In a casserole on medium heat, add the pumpkin puree, water, spices and peanut butter. Stir until peanut butter has dissolved. Now, add the oats and mix well. Cook for five minutes until the oats are cooked and creamy. Transfer the oatmeal to the serving dish and add the toppings. WP_20150329_003
