Sweet Potato Oatmeal

WP_20150317_001                                                                                                                                                                                           If there is pumpkin oatmeal, why not sweet potato oatmeal. They are similar carbs but just with a very big difference in their nutritional facts. Sweet potatoes are more sweet than pumpkin therefore they contain 22g of carbohydrates per 100g of serving. The texture of the sweet potato when puree is thicker than the pumpkin puree. The most important thing is that in this meal you will get many nutrients that will benefit your body and boost your functions.


Ingredients:                                                                                                                                                                                                                                      yield: 1 person

1/2cup oats      50g mashed sweet potato      1/4tsp coconut essence      1/4tsp vanilla essence     nutmeg and cinnamon to taste     1cup ginger water     2cloves

Additional:  1T favorite nut (I added peanuts)      strawberries      1T coconut shreds


Procedure:                                                                                                                                                                                                                                              In a casserole mi the oats with the water and turn on the stove on medium heat. Now, stir the mashed sweet potato, spices, essences, peanuts and coconut shreds. Let boil and then lower the fire and cook until creamy and cooked. Finally, transfer the oatmeal to the serving dish and add the strawberries.WP_20150317_005

Nutritional facts: 6.5g fat      47.5g carbohydrates      11.5g proteína


Feel free to add other toppings such as greek yogurt and dried fruits.
