Arroz con dulce is a Puerto Rican typical dessert and since I am not in my Island this Christmas, I woke up with the feeling of eating something that would remind me of my tradition. I thought that arroz con dulce would be a good option because is a dessert that I can transform into a breakfast and second it would be very interesting and fun to have something like this for breakfast.
If you don’t know what arroz con dulce consist about, it is rice cooked with coconut milk, sugar and holiday spices such as cinnamon and cloves. Many people add raisins to it and topped it with more cinnamon. To my healthy and breakfast version I incorporated the raisins, nuts and vegan pea protein powder. I cooked it with cinnamon and nutmeg. I chose to topped it with coconut yogurt, a bit of almond butter and a side of berries.
It was definitely a great decision for this day.
1/4 cup brown rice (may use white rice)
1/2 cup water
1/2 cup almond milk
1 T maple syrup
1-2 T raisins
1- 2 T nuts
2 T pea protein powder
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 cup coconut yogurt
1/2 T almond butter
1- Turn on a pot on medium heat with the liquid, spices, maple syrup and rice.
2- Let boil and stir. Lower the heat and let cook for approximately 30 mins. Do not let the rice absorb all of the water, leave a little bit of the liquid so it can be moist and not dry.
3- Once the rice is tender add the raisins, nuts, protein powder and stir again until the protein has dissolved completely.
4- When finished, transfer the arroz con dulce to the serving dish and add the preferred toppings.
