Banana and Peanut Butter Pancakes are so unique and you will never want to change them as a great option for breakfast. They are vegan and however fluffy, soft and moist. I used banana, rasberries, dark chocolate chips and peanuts for toppings. I also served greek yogurt and sprinkle a bit of cocoa powder. The dark chocolate chips will melt on top of the hot pancakes and the cocoa powder will blend with the greek yogurt as you take each bite. You can use any syrup to dip them or mix the greek yogurt with any flavor to boost them. Be very creative! There are a myriad of combinations you can make with these delicious pancakes. Each bite is a travel to heaven!
Ingredients: yield: 1 person
1/4cup whole wheat flour 1/4tsp baking powder 1.5oz mashed banana 1T peanut butter a pinch of salt, nutmeg and cinnamon 1/4tsp vanilla 1/4tsp coconut essence ginger water for mixing
Toppings: 1/3cup greek yogurt 1.5oz banana in slices rasberries 2tsp dark chocolat chips 1/2tsp honey
Procedure: In a bowl mix all the ingredients for the pancakes and dilute with ginger water until pancake consistency. After that, turn on a pan on medium heat and spray coconut oil. Pour a batch of the batter in the pan and cook during until bubbles appeared. Flip and cook 30secs more.
Once cooked, transfer them to a serving dish. Add the toppings
