Le Crepe Bowl

I saw this fun idea scrolling through my Instagram account so I gave it a try. I thought it was a different and funny way to enjoy crepes. You can fill your crepe bowl with anything (mousse or yogurt) and topped it with fruits and other toppings such as chocolate, coconut, nuts or PB.

I cooked the crepe as I normally do and instead of serving it in a flat dish, I put it in a deep dish. I finally, added the yogurt and fruits.

Ingredients:

yield: 1 serving

For the crepe:

1/4 cup gluten free flour

1/4 tsp baking powder

a dash of cinnamon and nutmeg

sea salt

3 T pea protein powder

water for mixing

Additional:

1/3 cup coconut yogurt

your choice of fruits

your choice of toppings

Procedure:

For the crepe:

1- Mix all of the dry ingredients.

2- Pre heat a pan and spray coconut oil.

3- Little by little add the water and mix until crepe consistency.

4- Once ready, pour all of the batter into the pan and let it spread. If you have to move the pan in a circular motion, do it.

5- Let it cook for about 4-5 mins until the edges lifted and the center looks firm.

6- Flip and let cook another minute.

7- Once done, transfer it to the deep dish.

Assembly:

1- Add the yogurt to the crepe. Add the toppings. Enjoy!
