Even though I am vegan, I am not a lentil eater, but two weeks ago I experienced the “craving” of eating lentils. I bought green and yellow lentils and had enjoy them differently. One of them is as a meatball. I found a recipe and wanted to give it a try becuase I already have Tofu Balls, Quinoa Balls and Falafels so why not having another type of balls which you can enjoy on pita bread, salad, with rice or pasta.
These balls only have potatoes, lentils and spices. Three simply ingredients and no flour included so they are gluten free. You can use boiled potatoes but I used some baked potatoes that I had made earlier. I used the green lentils but any other will work. As for the spices I used a little bit of a chopped onion, garlic, paprika, basil and curry.
I had enjoyed them so far with pasta and salad. I poured over them a Homemade Tomato Sauce.
yield: 21 balls
100 g / .5 cup dry cooked lentils
350g cooked potatoes
A pinch of sea salt
1/2 tsp curry
1/2 tsp garlic powder
1/4 chopped onion
1/4 tsp basil leaves
1- Cook your lentil and potatoes separately.
2- Pre heat the oven at 350ºF.
3- In a food processor incorporate all of the ingredients and slowly porcessed them unil no chunks of potatoes are left. You may need to add 1/4 cup of water while blending everythin together. Add more if necessary but ne careful to not end with a runny batter.
4- Take 2T of the batter, shape it into a ball (with your hands) and put it into a greased baking tray. Repeat the process until the batter is finished.
5- Bake during 30mins. Check if they are done and if yes, enjoy with your choice of dish or let cool and store.
