An Update to My Peanut Granola

Peanut Spread Granola, definitely for peanut lovers! Although the peanut flavor is not dominant, the after state might. This granola thanks to Naturally Sassy is unique. It has a perfect crunchy texture (not too crunchy that it will hurt my jaw and neither soft or gooey. The flavor is smoky and slightly burnt but delicious. This granola only has 3T of organic agave so it is not so sweet like most of the granolas, which is something that we always have to be aware of because some granolas can have lots of sugar and besides the amount of sugar it may have we must look also at the source. Traditional granolas are made with sugar and others with honey or agave. There are other granolas like the Pumpkin or Sweet Potato Granola that I made that may be sweeter but it is mostly the pumpkin or the sweet potato that added the sweetness.

Instead of using regukar peanut butter, I used PB powder because it is higher in protein and lower in carbohydrates. Since I will have a liquid base (PB powder+almond milk), this recipe does not requires oil.

The raw cacao nibs that I added,  gives this granola a more unique characteristic because it is not as sweet as you expect it to be. I enjoyed this granola as a cereal with coconut milk and papaya.

Ingredients:

8 servings

2.5 cups oats

1/2 cup Peanut Butter Powder

1/3 cup almond milk

3 T organic agave

2 T raw cacao nibs

Procedure:

1- Pre heat the oven at 180°C.

2- In a casserole, mix the liquid ingredient first until homogeneous.

3- Then, add the oats and the raw cacao nibs and mix until covered.

4- Place the granola in a baking tray and bake during 20 mins.

5- Remove, stir and bake for 10 more minutes.

6- Takeout from the oven, let cool completely and store.
