Caramelized Pecans

Who doesn’t like Caramelized Pecans? They are a classic in carnivals and candy stores. I remember smelling the sweetness of caramelized pecans each time I passed through a hall from Plaza Las Americas where a candy booth is at. Recently, I had a family dinner and the salad had caramelized pecans. What a delicious flavor and texture they added to the dish. I started to wonder that maybe those store-bought caramelized pecans had high fructose corn syrup and other undesirable ingredients. So I made my own cluster of caramelized pecans at home .

I only used maple syrup, nutmeg and cinnamon. Mix all of the ingredients until the pecans are well coated and bake in the oven. Two simple steps and that’s it!

You can eat this pecans with anything: oats, ice creams, smoothies, salads.

By the way, did you know that pecans are the highest nuts in antioxidants?!

Ingredients:

yield: 4 servings

serv size: 1/4 cup

1 cup activated pecans (soaked them overnight or 4hrs and let them dry completely)

1.5 T maple syrup

2tsp nutmeg

1 T cinnamon

Procedure:

1- Pre heat the oven at 180ºC.

2- In a bowl coat the pecans with the spices and maple syrup until fully coated.

3- Put them in a baking tray and bake for 10mins.

4- Let them cool completely so that the maple syrup hardens.

5- Then, enjoy or store in the refrigerator.
