Vegan Chocolate Chip Cookies

Who doesn’t love chocolate chip cookies?! They are the mother of all of the cookies. They are specially enjoyed with a glass of milk before going to sleep. I even think that these are Santa Clause’ favorite cookies! Chocolate chip cookies are also a childhood cookie, most of us had Chocolate Chips Ahoy! cookies as a snack during school and did not like to share them. Don’t feel bad about that, we can understand 

I wanted to make a vegan version about these cookies because usually I do new vegan desserts and do not try to imitate  a classic dessert but chocolate chip cookies are too traditional so I had to make them. It was not easy to find the correct recipe because many vegan versions had vegan butter and sugar, which are the key ingredients to make the perfect cookie, but I do not use any of both ingredients so my research took hours, I can say. Then, when I search for raw cookies, all I found was with nuts and dates which when put to practice, it created a cookie dough consistency instead of a cookie consistency and I wanted that crunchy texture and cookie shape. But I persevere and find these Paleo Chocolate Chip Cookies from The Detoxinista. Simple ingredients, simple procedure and extraordinary results!

If I would not told you that these cookies are vegan you would not have thought about it. They have the same crunchy texture and they are firm. Their shape is so round just like a normal cookie. It is so incredible for me that it does not have any butter nor sugar. Megan, definitely nailed this recipe! The sweeteness is perfect, it only has 3 T of organic agave and it balanced so well with the bitterness of the raw cacao nibs. I used Terrasoul Raw Cacao Nibs which I bought at Amazon. They are high quality, delicious, raw, organic and vegan.

Another highlight of these cookies is that they are GLUTEN FREE! They are made with almond flour, actually, home made almond flour, instead of whole wheat flour. I had never used bought almond flour because I buy raw sliced almonds in bulk and do my own almond flour so I can;t make a comparison if you are going to use store-bought almond flour. But this homemade almond flour worked 100% on these cookies. Just look at their appearance! And the texture was so impressive!

Their smell is so powerful that your neighbors will call at your door! I am not kidding  My mom, that lives in the second floor, went down to my apartment to ask me if I was the one with the delicious vanilla cookie fragrance. The smell is so delicious just like if you have a vanilla cookie candle like those from Yankee candle or Bath and Body Works!

Just to make them for your visit, friends, for your children, grand children or nephews, this cookies are great for filling that Christmas cookie jar.


yield: 10-12 cookies

2 cups almond flour

1/4 cup coconut oil

3 T organic agave

1/4 tsp sea salt

1/2 tsp baking powder

2 tsp vanilla extract

1/3 cup raw cacao nibs


1- Pre heat the oven at 170ºC

2- If you have a store-bought almond flour, first, mix the dry ingredients. If not, add 2 cups of almonds to the food processor until fine consistency.

3- Mix in the wet ingredients and mix completely.

4- Then, fold in the raw cacao nibs.

5- On a greased baking tray, add a scoop of the cookie batter and flatten. Repeat the process until the batter is over.

6- Put in the oven for 35 mins.

7- Take out from the oven and let cool completely.

8- Store in the refrigerator or enjoy!
