This is another recipe from Food is Medicine that my father sent me. As a healthy vegan eater I found out that I do not consume cookies because most of them have lots of sugar and vegan butter but this recipe is perfectly healthy.
The original recipe included coconut sugar and apple sauce but I used organic agave instead because I did not have any of those. The only disadvantage is that using agave does not gives the crispy texture of a traditional cookie.
What you will need for these cookies are oats, raisins, organic agave and any nut butter. The original recipe did not have cinnamon but I like cinnamon on my oats so I added a lot of it. For the nut butter, I used half of peanut and half of almond. There fore, you do not have the struggle of which one to use and the cookies does not take like peanut butter at all.
yield: 10 cookies
1/4 cup oats
1/2 cup water
1/4 cup organic agave
a dash of cinnamon
a pinch of sea salt
3/4 tsp baking powder
1/4 cup raisins
1/2 cup nut butter
1- Pre heat the oven at 180ºC.
2- Cook the oatmeal with the water, cinnamon and salt. Once done stir in the baking powder.
3- In a bowl mix the nut butter with the agave.
4- Incorporate the cooked oatmeal, raisins and mix well.
5- In a baking tray, drop a tablespoon of the cookie mixture and flatten with your fingers or with a tablespoon.
6- Bake for 20 mins. Turn off the oven and let cool completely before storing them in the refrigerator.
