Pesto Pasta


Wow Wow Wow!!! What a bowl of pasta! I do not know why most of the people are afraid of pastas…they won’t bite you xD. Just kidding!

Pastas can be high in carbohydrates but please,  DO NOT forbid yourself of indulging some foods. For example, you can have pastas but in smaller portions and have benefits from it like happiness, of course, and weight control. After sushi, pastas are my favorite food for lunch or dinner.

I made this pastas with tomatoes and sauteed mushrooms and onions. I prepared a pesto sauce with Pistachio and Coconut Spread and avocado. When I had my first bite… WOOOOOW, D E  L I C O U S. Please I wanted nobody to talk to me until I finished my meal!


yield: 9 servings

For the pasta:

a packet of pastas (any type)

sea salt

a pinch of oregano

sauteed onions and mushrooms

baby tomatoes

For the sauce:

a whole avocado

About 1 or 2 cups of lettuce or any green leave (kale, spinach)

1/4 cup Pistachio Spread

1/4 tsp garlic

a pinch of sea salt

About 1 cup of water


1- Cook the pasta as you normally do, I added sea salt to the water.

2- While the pasta is cooking, make the pesto sauce by blending all of the ingredients in the food processor.

3- Once the pasta is done, transfer it to a bowl with ice cubes to stop the cooking process.

4- In the meantime, sauteed the vegetables.

5- In a small casserole or pan heat ypur serving of pasta with the vegetables and sauce.

6- Serve and enjoy (better with a cup of wine xD)img_0282
