A Christmas Spirited Pancakes

What Puerto Rican do not like a chilled Coquito during Christmas meetings? I made my own version of vegan coquito and then make this Coquito Pancakes topped with berries and a coquito sauce.

The recipe for Vegan Coquito is here. The only detail… is that the coquito has rum, but believe me that you won’t feel it in the pancakes :”D

For the coquito sauce on top of the pancakes, I mixed three of my Nuts Spreads: Coconut, Walnut and Cashews. You can use any spread if you do not have those. I used 1:1 ratio of the Spread and coconut milk.

The pancakes are fluffy and moist and they DO taste like coquito! ❤ So if you want to turn on your Christmas Spirit make ahead these pancakes!

Ingredients:

yield: 5 medium sized pancakes

1/4 cup whole wheat flour

2T vegan protein powder

a pinch of cinnamon, nutmeg, sea salt and vanilla

1/4 tsp baking powder

3 T coquito

water for mixing

For the coquito sauce:

1 T of each Coconut, Walnut and Cashew Spreads

3-4 T of coconut milk

Additional:

Berries for toppings

Procedure:

1- Mix all of the dry ingredients for the pancakes, first.

2- Second, add the vanilla, coquito and water to the dry mix. Stir until well combined.

3- Turn on a stove top on medium heat and drizzle organic coconut oil in the pan.

4- Pour an amount of the pancake batter and let cook for three minutes, until it looks firm. Flip and cook two more minutes.

5- Repeat the process until the batter is over.

6- Serve the pancakes.

For the sauce:

1- Mix all of the ingredients, carefully, until sauce consistency.

Assembly:

1- Pour the desire amount of coquito sauce on top of the pancakes and garnish with berries
