Pumpkin Spiced Granola

wp_20161113_013 You know that Fall has arrived when EVERYTHING is pumpkin! Granola is not an exception. When I found this recipe from The Healthy Maven (www.thehealthymaven.com), I thought that the granola was pumpkin SPICED but for my surprise, it actually contained pumpkin puree. I advertise you, DO NOT BE SKEPTICAL! This granola is sweet and crunchy. I added walnuts (my favorite nuts) and raisins.

You’ll be asking yourself why is this granola so yellowish? Besides the pumpkin puree, what gave this granola the yellowish color was a bland of turmeric and ginger powder. So this Pumpkin Spiced Granola can be determined as medicinal too!

Ingredients:

3cups oats

1 cup walnuts

1/3 cup raisins

1 T cinnamon

1tsp nutmeg

1T turmeric and ginger powder

1/2 tsp sea salt

1tsp vanilla bean extract

1/3 cup pumpkin puree

1/4 cup organic coconut oil

1/3 cup organic agave

Procedure:

1- Pre heat the oven at 350° F.

2- Mix all of the fry ingredients.

3- Add the remaining ingredients and mix until everything is coated.

4- Place the granola in a flat baking tray and cook for 20 minutes.

5- Take out from the oven, move with a spatula and place in the oven again for 20 more minutes.

6- Take out from the oven and let cool completely.

7- Enjoy as a cereal or use it as a topping.
