Tomato Cashew Sauce

I don’t know if you have been connected with my IG or FB account; if so, you may noticed that the Cashew Spread has been my new Peanut Spread (xD). I am in LOVE with the CASHEW SPREAD because it’s flavor is so soft that you can use it either in sweet or salty dishes and it’s texture is so spreadable that you can use it in ANY dish however you want it. The Cashew Spread is ideal for breakfast, lunch, diner, snack or dessert. Contrary to the Peanut Spread, the Cashew Spread does not ties your tongue and neither rules your flavor and it makes a perfect balance with everything!

I have to confess that I am a FAN OF PASTAS! They are my favorite food so far, it does not matter their shape (spaghetti, cannelloni, elbows, bows, etc), I love pastas with a GREAT SAUCE and VEGETABLES. For these pastas I created a Tomato Cashew Sauce. The sauce is INCREDIBLY DELICIOUS!!!! I simply made it with tomatoes, basil, garlic and Cashew Spread.

PS: Basil is ALWAYS  a good idea for sauces ;D

To make the sauce you only need to blend the ingredients in a food processor until consistency. You can use this sauce with chicken, fish, tofú, vegetables, as a dressing for a salad or baked potato or to your quinoa.

Ingredients:

yield: 6 servings

For the pasta:

a packet of pasta

water

a pinch of sea salt

add any spice

For the sauce:

1 cup baby tomatoes

1.5 T Cashew Spread

2tsp basil leaves

1/2tsp garlic powder

Additional:

Steamed Broccoli

Sauteed onions and mushrooms

Procedure:

For the pasta:

1- Cook the pasta in a casserole with the water, sea salt and other spice until ‘al dente’

2- Then, turn off the heat.

For the sauce:

1- Blend all of the ingredients in the food processor until consistency.

Assembly:

1- Drain the pasta.

2- In a casserole on low heat, add the vegetables and the sauce.

3- Cook until everything is well mixed and the pasta is covered with the sauce.
