A Complete Vegan Dish Consisting of Quinoa, Chickpeas, Walnuts and Your Favorite Vegetables

This dish is really complete and very delicious. The quinoa cooked with pineapple juice is so nutritiously addictive! You won’t get tired of that flavor, a dish is not enough. I even had this dish for lunch and dinner! I cooked the quinoa in a natural pineapple juice (which I store from when I cut a pineapple) and added garlic. Then, I cooked chickpeas with cilantro and finally boiled some carrots and celery until tender. The quinoa was super juicy. I loved the feeling of the pineapple juice in each bite, but also you can feel a nice garlic touch. The vegetables add a beautiful color. I used carrots and celery but you may use your favorite vegetables. The flavor of the vegetables also counts in order to make this dish delicious so choose wisely. The tender carrots are slightly sweet and the celery…tastes like celery. I don’t know how to describe their flavor, it is just so peculiar. I cannot classify it as sweet, salt nor bitter.

For this dish, I cooked all the elements separately and then mixed like a salad in my serving deep dish. At the mixing time, I added a handful of walnuts. Walnuts are my favorite nuts! They are the nuts higher in Omega 9 and they have a such peculiar taste. The walnuts added healthy fats, protein and crunchiness to this rich bowl.

Ingredients:

yield: 2 servings

For the quinoa:

1/2 cup quinoa

1 cup pineapple juice (straight from a pineapple)

1/2 cup water

1/4 tsp garlic powder

For the chickpeas:

a can of chickpeas

1/2 tsp of cilantro

For the vegetables:

1/2 cup baby carrots

1/2 cup cut celery stalks

Additional:

Two handfuls of walnuts

Procedure:

For the quinoa:

1- Place a pot one medium heat with the water and pineapple juice.

2- Add the quinoa and let it boil.

3- Stir to see of the grain has open.

4- Let it cook until the liquid has been dissolved and turn off the stove top.

For the chickpeas:

1-While the quinoa is cooking, cook the chickpeas in a small pot with the cilantro.

2- Cook for 1o minutes, until they are tender.

For the vegetables:

1- Put water to boil in a pot

2- Add the vegetables and cook until tender (about 10 minutes)

Assembly:

1- Add 1/2 cup of everything plus the handful of walnuts and mix well in your serving dish.
