Multi-Use Red Berry Mousse

This fantastic recipe is from Naturally Sassy. I made some adaptations according to the ingredients I had on stock. For example, instead of coconut milk, I used coconut flour.

I have been very creative with this mousse. I had them as a compliment, as a nack, with chia puddings, to fill crepes or as a frosting for pancakes. This mousse is super healthy. It is plenty of antioxidants from the rasberries and strawberries. It has the essential fatty acids from the cashews and is low in carbohydrates. I really recommend you to start substituting this mousse from the commercial ones that are based on unhealthy fats, sugars amd chemicals. I prokise that you won’t get tired of this mousse. Be very creative and dare to use other fruits and spices in the recipe.

This mousse is perfect for summer becuase it is served cold. You may served it to your guests garnished with fruits, seeds or nuts.

Ingredients:

yield: 6 servings

1/4 cup coconut flour

1/2 cup soaked cashews

1 cup raspberries

2 cups strawberries

1 cup of almond milk

Procedure:

1- Pour all of the ingredients in a food processor until creamy.

2- Serve in cups and chill in the refrigerator for about 15 minutes.

3- Take them out and garnish with your favorite toppings.
