This Porridge is an alternative to oatmeals. It still warm, healthy and nutritious but since it is made with couscous, you will obtain essential amino acids that the oatmeal does not provides. For the couscous porridge, you have to add the double amount of liquid or more for it to be smooth and perfectly cooked. I add ginger and vanilla to my Couscous Porridge and mix it with almond milk. It takes about 30minutes to cook the couscous. You have to stir it constantly to check if it is done or if it needs more liquid.
I topped my porridge with raspberries, banana slices and Pistachio Spread. I loved the texture, consistence and flavour of this dish! It is a perfect breakfast choice for vegans. You can also try it with quinoa.
Ingredients: yields: 1 person
1/4cup couscous a piece of ginger 1/4tsp salt and ginger powder 1/2tsp cinnamon and vanilla 2/3cup of almond milk
Optional Toppings: banana slices, raspberries, Pistachio Spread
Procedure: In a small sauce pan on medium heat stir the couscous with the almond milk and spices. When it begins to boil, lower the heat and stir slowly. Let it cook until smooth (compare to the consistency of the oatmeal).
Transfer the porridge to a dish and add the toppings.
