This pancakes are smooth and moist full of banana flavor. This breakfast dish is ideal for those banana lovers like me! Bananas are the best food for vegans because it is a nutritional dense fruit with lots of vitamins, nutrients and macros. Bananas also have a myriad of uses in the kitchen and are a great sweetener and egg substitute. I topped this pancakes with what was left from a rasberry nice cream I made, more rasberries, dark chocolates and Pistachio Spread for more flavor and color.
Ingredients: yields: 1 person
1/4cup whole wheat flour 2tsp meal flax seeds 2tsp chia seeds 1T honey 1/2 ripe banana 1/4tsp baking powder, salt, nutmeg, cinnamon and ginger powder 1/2tsp vanilla almond milk for mixing
Procedure: First, let stand the flax meal with 1T of water.
In a bowl, mash the banana and mix with the vanilla and honey.
Then, add all of the other ingredients including the flax meal seeds and mix with almond milk until pancake consistency.
Now, turn on a stove top on medium heat and drizzle coconut oil. Pour an amount of the batter into the pan and flip when bubbles appear and let cook another minute.
Once done, transfer the cooked pancakes to the serving dish and pour the rasberry ice cream, add the rasberries and dark chocolate pieces and drizzle the Pistachio Spread.
