Pumpkin Waffle

This Pumpkin Waffle topped with warm slices of apple, crunchy granola, blueberries, banana and pistachio butter are great for this new season. It is smooth and moist. Ingredients such as pumpkin, sweet potato and apple are the most popular when speaking of fall season. Any of this ingredients is well introduce to a warm dish on cold days or cold dish in warm days.

This waffle have different textures and flavors that will delight you on the morning. As me, you can also be very creative with the toppings. Toppings  add personality to your dishes. This waffle is also an amazing breakfast for a fall brunch and Thanksgiving Day for the family.WP_20150901_003

Ingredients:                                                                                                                                                                 yield: 1 person

1/4cup whole wheat flour           2tsp brown sugar           1/2cup pumpkin puree       1/2tsp baking powder   1/2tsp vanilla        a pinch of ginger       cinnamon and nutmeg to taste

Additional: sliced apples, sliced bananas, a handful of granola, blueberries, nut butter

Procedure:                                                                                                                                                                     First, preheat your waffle iron on maximum heat.

Now, mix all of the ingredients for the waffle until homogeneous. You may add more puree or water until waffle consistency. Once done, pour all the batter in the center of the waffle iron and cook for 5-7 mins each side. Carefully, take the waffle to the serving dish and add the toppings.

For the toppings, I cooked until warm and soft 1/4 of an apple and cook the granola in a skillet until aromatic and crunchy.
