Peanut Butter and Banana French Toasts


This Peanut Butter and Banana French Toast dish is for those peanut butter and banana lovers. I used peanut flour that I made. I simply grind peanuts in my food processor until they turned into flour. It does not take even three minutes to make. To make the french toasts, I mashed half of a a banana and mixed with 1/4 cup of peanut flour and a splash of vegan milk. Then, I added the egg whites and frothed them. I swamp the bread in the egg mixture and then cooked them until done. I topped the moist bread with a peanut greek yogurt sauce, sliced bananas, blueberries and cinnamon.

The peanut banana scrambled is really delicious. You can taste the peanut butter and a bit of sweetness from the banana and then you have the meaty texture from the egg whites.


Ingredients:                                                                                                                                                                                               yield: 1 person

2 slices of bread          6T eggwhites         1/4 cup peanut flour        1/2 mashed banana     1/2tsp vanilla       2tsp brown sugar       a splash of vegan milk

For the peanut greek yogurt sauce:  1T peanut flour      3T greek yogurt        2T almond milk

Toppings: banana slices, blueberries, cinnamon, peanut butter, peanuts


Procedure:                                                                                                                                                                                                 In a bowl mix all of the ingredients for the french toasts. Turn on a stove top on medium heat and spray coconut oil. Get the bread well coated and then cook it in the pan about three minutes each side or until firm but juicy.


Transfer them to the serving dish. Cook the remaining batter as scrambled eggs.


For the peanut greek yogurt sauce, simply mix all the ingredients until well infused.

Finally, pour the peanut greek yogurt sauce over the french toasts and add the favorite toppings.
