Green Waffle

This Green Waffle adds up to my collection of color recipes! They are super healthy because they are mixed with spinach juice so you’ll be like Popeyes! In this waffles you can get some of the benefits of the spinachs such as vitamins and minerals. This can be a great breakfast for those skeptical people who does not like to eat veggies. They are so delicious that they will not notice the hidden veggie they are made of.

Since the taste of spinachs is recognizable and can turn my waffle bitter or with a not nice taste, I added half of a mashed banana and 1T of brown sugar to the batter. The results? The Green Waffles was aromatic and with no trace of spinach.

I topped it with greek yogurt, strawberries, blueberries blackberries, dark chocolate chips and a cocoa salsa that I made with agave.

Ingredients:                                                                                                                                                                                        yield: 1 person

1/4cup whole wheat flour       1T brown sugar      1/2tsp baking soda     1/2tsp coconut essence (optional)     half of a banana mashed      green juice for mixing

Toppings: 1/3cup greek yogurt       dark chocolate chips         berries

For the cocoa salsa: 1tsp cocoa   1/2tsp water        2tsp agave

Procedure;                                                                                                                                                                                         First, turn on the waffle maker on maximum heat and spray coconut oil.

Now, mix all of the dry ingredients for the waffle and mix. Now add the mashed banana and mix everything carefully with the green juice until waffle consistency. Pour all of the batter in the center of the waffle maker and cook during 7 minutes on each side.

While the waffle is cooking, make ahead the cocoa sauce. First, in a small glass mix the cocoa with the water and heat 12 seconds (just for the cocoa to dissolve). Give it a stir and add the agave. Stir once again until it is homogeneus.

Once the waffle is done, transfer it to the serving dish.
