Sweet Potato Ice Cream


This Sweet Potato Ice Cream is super healthy and naturally sweet. It will be a redundancy if I say that the sweet potato make this ice cream peculiarly sweet. I blended 150g of cooked small pieces of sweet potato with 4-5oz chopped and frozen banana. I added an allspice for a better flavor. I topped the ice cream with banana, blackberries, blueberries, pistachios and a drizzle of peanut butter. This dish will provide you energy with its complex carbohydrates. It has many vitamins like A and minerals such as potassium. Besides it contains all the properties of tumeric because I added a piece of this root to intensify the orange color.


Ingredients:                                                                                                                                                                                     yield: 1 person

4-5oz chopped and frozen banana            150g cooked sweet potato           1-2 pieces of allspice       a piece of tumeric  water for blending

Optional toppings: banana, blackberries, blueberries, pistachios, peanut butter, seeds, other fruits


Procedure:                                                                                                                                                                                      In a blender add all of the ingredients and add water until ice cream consistency. Transfer the ice cream to the serving dish and add the toppings.
