Guava Oatmeal


Guavas are another tropical fruit and very famous in Puerto Rico. They smell delicious and are sweet. Puerto Ricans usually make guava paste and eat it with a piece of white cheese, fresh from the country. People also make jelly, juice and salsa for chicken, fish or salad. In Arrope they make a guava-mayo. It is very very delicious. Who would have done that?! Only them, Puerto Ricans! I sometime eat their Bewaffled waffles with guava-mayo and they are a bomb! I suggest you to try that some time you visit Arrope. There are contrasts in the flavors. Each bite you take is an explosion.


Back to the guava! I made an Overnight Guava Oatmeal. I first peeled and unseeded the guavas. I cut them in small pieces and add them in the blender with a piece of ginger and water until get a juice consistency. I used three medium guavas that I found at Freshmart. Then, in a deep dish I mix the oats, chia, cinnamon and vanilla with the guava juice until coated. I put the lid to the dish and store it on the fridge during the night. In the morning, I took it out and topped the Guava Oatmeal with half a banana and since I could not decided whether to use pistachio or peanut butter, I used both!


Ingredients:                                                                                                                                                                                     yield: 1 person

2/3 cup oatmeal            1tsp chia seeds        1/2tsp vanilla         1/2tsp coconut essence(optional)       a dash of cinnamon      guava juice

Toppings: pistachio butter, peanut butter, bananas, other fruit, seeds, nuts


Procedure:                                                                                                                                                                                         For the guava juice: Take three medium guavas. Peel them with a peeler and unseed the with a spoon.


After, cut them in tiny pieces and blend them with a piece of ginger and water until juice consistency. Transfer it to a crystal bottle and store it in the refrigerator.

For the oatmeal: In a deep dish mix all of the oatmeal ingredients and stir the juice until the oats are well coated (about 1cup of juice). Put the lid and store it in the refrigerator overnight. In the morning, topped it with the ingredients you like the most and enjoy!
