Banana Nut Bread


Yesterday, I made cashew milk and I love it! Cashews have a peculiar taste. For me, they taste like vanilla. This flavor makes me to not add any sweetener to the milk or butter. After making the milk, I had about 2/3cup of cashew meal so I thought… I have nuts, bananas and cashew meal. I can make a Banana Nut Bread with those. I put my apron on and let my imagination fly along the aromas of baking in my kitchen. There was a long time since I did not bake an original dessert recipe. I usually bake recipe from my favorites food blogs but this Banana Nut Recipe is from my own.

You can try this bread with another type of meal and milk if you do not have cashew meal or milk available. Of course, the flavor will be different but it will still be nutty, healthy and delicious. I used peanuts, but feel free to add another type of nuts or a mix of them. This loaf of bread is very moist and have the perfect sweetness. You can have eight generous slices of this loaf.


Ingredients:                                                                                                                                                                                     yield: 1 loaf (8 pieces)

Dry ingredients: 1.5cups whole wheat flour        1/2tsp vanilla         1/4tsp nutmeg       1/2tsp salt         1tsp baking powder        1/3cup brown sugar

Wet ingredients: 1 banana (3-4oz)         2/3cup cashew meal        1/2cup cashew milk       1/2tsp vanilla      1/2tsp coconut essence (optional)                          2/3cup water (room temperature)

Additional: 1/3cup peanuts


Procedure:                                                                                                                                                                                         Preheat the oven at 225ºC. Also, lightly oil a bread pan.

Mix all of the dry ingredients in a bowl.

Then, in a food processor add the wet ingredients until well incorporate.

Pour the wet ingredients with the dry and mix until everything is homogeneous. Now, add the peanuts and stir one more time to spread the peanuts. Once done, pour the batter in the bread pan and bake during 40-50minutes. Remove from the oven and let cool completely (about 30mins). Take out from the mold and carefully cut in eight satisfying slices.
